Return              Sweet Potato Cake

2 cups self rising flour
2 cups raw grated sweet potatoes
2 cups sugar
2 tsp cinnamon
4 eggs
1 1/2 cups Wesson oil

Mix eggs, sweet potatoes, oil and sugar well, Add flour to mixture. Bake in 3 layers at 350 deg F until done. Allow layers to cool then apply icing.


Icing
1 box powdered sugar
1 stick margarine
1pkg (8oz) cream cheese
1 cup chopped pecans - or coconut option
1 tsp vanilla

Soften margarine and cream cheese, beat with sugar and vanilla, then add pecans or optional coconuts.
